Clay and Josie Erskine started Peaceful Belly in 2002 in Caldwell's Sunny Slope wine region, and the farm now grows more than 180 mostly heirloom vegetable varieties using cover crops, compost, and drip irrigation instead of synthetic inputs. Beyond the CSA and farm stand, Peaceful Belly presses over ten hard apple ciders on site and runs a farm-to-fork restaurant open Friday through Sunday.
