Indian Brook Trout Farm raises rainbow trout from egg to plate, producing roughly a million pounds a year at its aquaculture operation on West Michigan Avenue outside Jackson. Visitors come for the seasonal fish fry — broasted trout with all the sides — and for school and group tours that walk through the raceways where the fish are grown. Pumpkins get grown here too, a second harvest layered onto the fish operation each fall.
