Balfour Farm in Pittsfield runs entirely off-grid on 100 acres, milking a herd of Normande cows that started with a single animal in 2000 and has grown to as many as 50. Doug and Heather Donahue turn that milk into award-winning cheese and yogurt, plus non-GMO salami, woodland-pastured pork, beef, and eggs, all sold through their on-site Little Cheese Shop.
