Lira Rossa is an Italian creamery in the heart of Texas — since 2016, hand-making traditional cheeses at the Four E Dairy in Moulton, right next to the milk parlor, using only the farm's Jersey cow milk. Fresh mozzarella, ricotta (plain and pecan-smoked), raw milk Latteria aged up to a year, and "Moultonzola" blue sell every Saturday in Houston and Sunday in Austin.
